ingredients:
1 Pouch (12 oz dry) cooked Bamboo Rice
(approx 3-4 cups fluffed)
1/2 C dried Cranberries
1/2 C Flat Leaf Parsley, chopped
1/3 C Shallots, minced
1/4 C fresh Sage, minced
15 oz. can Mandarin Oranges strained, reserve the juice
juice of 1/2 Lime

instructions:
Prepare Bamboo Rice according to directions on package.
Place in large bowl, fork fluff, let cool until the rice is warm.
Add Cranberries, Flat Leaf Parsley, Shallots, Sage, Mandarin Oranges and Lime Juice.
Add 1/2 of the Mandarin Orange juice to moisten and sweeten the dish. Add more if desired, but avoid adding too much as this can make the dish mushy.
