2 C cooked Black Beluga Lentils
4 C roughly chopped Flat Leaf Parsley
1 1/2 C diced Tomatoes
1 C Diced & Seeded Cucumber
1/4 C chopped Green Onions
1/4 C freshly squeezed Lemon Juice
1/4 C Extra Virgin Olive Oil
1 1/2 t Om My!
1/4 t minced Garlic
pinch of Kosher Salt
instructions:
Prepare lentils according to directions on package.
Combine all ingredients in advance, stirring occasionally.
Put on crusty bread as an appetizer. Serve over greens as a side dish or in a pita as a main course. Serve with freshly ground pepper to taste.
