3 T Olive Oil
2 C cooked Reds
1 C Celery-finely diced leaves and stalks
1 C Potato-1/4” diced
1/2 C Onion-finely diced
1/2 C Red Pepper- finely diced
2-3 T Wednesday Weeds

instructions:
Put Olive Oil in a hot pan. Add all veggies and saute until they begin to brown. Add Reds and Wednesday Weeds. Combine and warm well at a high heat to create a slightly crispy texture.
Remove from heat and serve. Or put a 3/4 C portion into an oiled heavy bottom skillet. Open a hole in the center and crack in a fresh farm egg. On a medium heat, cover and cook for 1 1/2 minutes or until yolk is just firm.
