ingredients:
3 C cooked Scarlet Runners
1 1/2 T minced Anchovies
1 t minced or crushed Garlic
1/3 C drained Capers
1/4 C Extra Virgin Olive Oil
3 T fresh Lemon Juice
1 t Salt
2 C trimmed and blanched Green Beans
2 large Red Potatoes cut into 1/4” rounds and broiled.
2 med Hard Boiled Eggs sliced into rounds.
1/2 C drained Caper Berries
1/2 C drained Nicoise Olives
1/2 C drained Roasted Red Pepper

instructions:
Prepare Scarlet Runners according to directions on package.
Combine Anchovies, Garlic, Capers and Olive Oil. Toss with prepared Scarlet Runners and add 1 t salt or to taste.
Arrange on a platter with the remaining ingredients and serve.
