3 T Spring Season Salt
1 lb Salmon Filet w/skin on back
Non-Stick Cooking Spray or Olive Oil Mister

instructions:
Rinse salmon Filet and pat dry with a paper towel. Cut Filet into 2” strips with a sharp knife, through the skin.
Dredge fish, flesh side down into Spring Season Salt to thoroughly coat. Invert and space evenly on a lightly oiled plank, stone pan or thick bottomed baking dish.
Top-spray with a non stick spray or oil atomizer. Broil on medium for 3-5 minutes. When whitening and weeping occur, remove fish from the oven and let rest 2-3 minutes. It will continue to cook so check the doneness and remove from cooking surface to serve when ready.
Use the top-spray technique on other dry seasonings and rubs to prevent burning while encouraging caramelization. Serve w/ plain Bamboo Rice and steamed Asparagus.
