Tomato Confit and Kickin' Pickle
ingredients:

Confit:
1 Pint halved Cherry or Grape (approx 20) Tomatoes
1/4 C Maple Syrup
1/4 C EVOO
1-2 T slivered Garlic Cloves
1 t Pink Salt
2 T Kickin' Comfort

Pickle:
1 C minced Sweet Onion
3 T Maple Syrup
1/4 C Seasoned Rice Vinegar
1/4 t Pink Salt
2 T Kickin' Comfort

Potato Disks:
3-4 medium red potatoes, thinly
sliced and tossed in oil

instructions:

Preheat the oven to 250 degrees. Toss together in a bowl and place on a heavy cookie sheet, skin side down. Bake for 2-3 hours until 1/2 their original size.





Mix and refrigerate






Pre heat oven and place on a heavy baking sheet to
crisp for 15-20 minutes - flip if necessary. Remove from
pan to a paper towel or drying rack and sprinkle on Allium Salt


Assemble with a smear of goat cheese and serve!
